Hey all, Kathy here. Thanks for stopping by for my very first blog post. I intend to give you a little glimpse into my life as an avid follower of the Paleo diet and all the health benefits it has afforded me over the last year.
During my time as a mother, I have treated my body very, very poorly. I ate a bunch of horrible processed junk food. I drank a lot of alcohol and smoked cigarettes on a regular basis. By my fortieth birthday I felt horrible. My weight was out of control. My skin was dry and itchy. My hair was thinning out and I had absolutely no energy.
I knew that I needed to do something, but I wasn’t so sure what exactly I should pursue. I started by simply reducing the volume that I ate and running a little bit. While I certainly saw some results, they were far from what I was hoping for. I was especially looking forward to increased energy levels, but they did not come on as strongly as I had hoped for.
I tried various health supplements and products and boy, was that a big mistake. It honestly was the worst. I got a bunch of zits and felt extra hormonal. I wanted to be fit, not a teenage girl! At this point, I honestly started to feel a little discouraged about the whole thing and started to get worried that I wouldn’t be able to meet my personal wellness goals.
But lucky for me, a friend at school turned me on to the whole Paleo diet thing. He learned in his evolutionary science class that our bodies have developed over time to function best on the types of food that were available to our ancestors when they first emerged on the scene millions of years ago.
I was a little skeptical at first, mostly due to the types of things I could eat (grains, dairy, sugar), but at this point I was willing to give it a try. What I found was that when combined with exercise, this Paleo thing really worked for me. Not only did I look better, but I felt better too!
Though I enjoyed seeing the results of the Paleo diet, actually eating Paleo got pretty old pretty quickly. I found myself eating a lot of raw fruits and vegetables since I was in college and meat is expensive. I didn’t know if I could stick to this ‘bland’ diet that I thought Paleo was.
Fortunately, I found Paleo Leap – The Paleo recipe book and all the incredible recipes that it has. This is a great little ebook that helped me stick it out with the Paleo diet and get to where I am today! One of my biggestest regrets during this season in my life is not having found a Paleo cook book like this from the start. It’s made an incredible positive inpact on my culinary life and I know it will blow your mind too!
